Diabetic Protein Shakes? Rat Chow is Better

Rat chow: that's what Ensure and Enterex Diabetic drinks remind me of. I'm not into protein drinks anymore--haven't been in years--but my parents are elderly and it's hard for them to cook. They're also diabetic, and yet my father's doctor recommended two Ensure drinks per day. That's 80 grams, or 18 teaspoons, of liquid sugar. The main ingredients in Ensure: Water, Sugar, Corn Maltodextrin, Milk Protein Concentrate, Soy Oil, Soy Protein Isolate, Cocoa Powder (Processed with Alkali), Pea Protein Concentrate, Canola Oil.  Seriously--the second ingredient is sugar. (Corn maltodextrin in a starchy food additive.) Isn't that a big ol' clue that this isn't suitable for diabetics? A pharmacist recommended Enterex Diabetic . It has fewer carbs, but 24 grams of liquid carbohydrate is too much at one sitting for many diabetics. How Long does it Take to Heal?

It takes anywhere from seconds to years. It depends on the issue, the person, their diet, and their lifestyle. Lierre Kieth, for instance, felt better the instant she started eating meat again--the tuna was like prana in a can. (Sadly, her back pain from the damage caused by long-term B-12 deficiency will never go away.) There have been a lot of 30-day challenges out there: 30-day paleo, 30-day Whole 9 , even 30-day gluten-free from Dr. Guyanet. (He actually had a terrific blog before he started going on about food reward.) I think these challenges last long enough to get allergens out of your system and let you see if re-exposure bothers you, yet they're short enough to seem manageable. Thirty days is more than long enough to begin clearing up GI problems caused by food. My GERD disappeared within a few days of starting a low-carb diet, and two days on a fat fast cleared up my gastritis. Some issues can take much longer. Bored with Steak and Salad?

How about almond-crusted liver and gathered greens & veg with refreshing paleo ranch dressing . Home-grown lettuce (along with a little from the farmer's market), nasturtium, lamb's quarters and borage flowers along with cucumber and bell peppers make for an interesting salad. To make the liver, have a beaten egg and some almond meal ready. (I take a handful of almonds and put them in the food processor with the S blade for a few minutes.) Cut the film off the liver and cut the liver into pieces about 1.5" square. Roll the pieces in the egg, then in the almond meal and fry in lard over medium heat.

It Doesn't Have to Be This Hard

If I'm ever in a trench defending my homeland from barbarians, I want Linda Wells, Editor-in-Chief of Allure magazine, next to me. She's spent her last couple of vacations at a boot camp eating vegan food, sans booze, caffeine, gluten and sugar and going on five-hour hikes, getting blisters along the way. She doesn't feel (or sound) self-righteous. She's lost eight pounds, but says she's ready to "re-tox." The Decadent Diet

Dedicated low-carbers like to describe their way of eating as nutritious, filling, healthy and traditional. But what about people who want to eat decadently, not Puritanically? Who are sick of busybody goody-goodies and diet police ? Low carb is good for them, too. On what other diet can you eat dip for dinner and dessert for breakfast? Guacamole, pork rinds, crispy fried pork (fried in lard, seasoned with salt). This isn't a cheat meal--you can have this every night and eat until you're full since there are hardly any carbs there. (Note that you can't substitute corn chips--they're too carby. And don't get guacamole that's full of carbs.) If the dinner looks a little skimpy, it's because I saved room for dessert. It's day 2 of being back on a very low-carb diet. I'm off the sweet potatoes (you know, those wonderful safe starches) and I've cut back the dark chocolate. I thought it would take a couple of weeks to keto-adapt and get back to feeling good, but I'm already feeling like my old self: no more upset stomach, no dragging myself out of bed late this morning, no nap on the bus tonight, and no mid-afternoon grogginess. Dark chocolate and sweet potato fries are taking up too much of my diet--so much that I probably got up to about 70g of carb a day. That's probably too much carb to make ketones and too little glucose to feel energetic. Walk down the middle of the road, Margaret Thatcher said, and you get hit by the traffic from both sides. This might be the reason I've been tired and my stomach is upset so often these days. (Upper GI problems were the original reason I started a low-carb diet.) I overslept by an hour this morning after forgetting to reset my alarm, even after nine hours' sleep and my dog trying to get me up. More Evidence we Evolved on a Meat-Rich Diet

I'm getting the sense that human ancestors were serious meat eaters. I'm reading The Wisdom of the Bones by Alan Walker and Pat Shipman, a contemporaries and colleagues of Richard Leakey. They discuss evidence that humans moved up in the food chain: increased sociality, territorial expansion and decreased population density, and smaller GI tracts. Sociality As Leakey noted in one of his books, if you live on raw vegetation, you can just grab a leaf or a piece of fruit and eat it. You don't need a tribe to do so; in fact, you might want to hide your booty from everyone else so they don't bug you to share it. Hunting big game, on the other hand, requires cooperation. Richard Wrangham says in Catching Fire that some hunter-gatherers have strict rules about women sharing their vegetables only with immediate family members, while men are supposed to share their meat (hunted cooperatively) with the group ( Catching Fire, page 163-164). Magical Research Shows Fat Makes you Sleepy

The Daily Mail has a story (1) about research (2) showing that a high-fat diet makes you sleepy. (See abstract 0977 in the research link.) This flies in the face of my experience and a whole lot of anecdotal experience, too (see the comments to the article). Since starting a low-carb, high fat diet, I haven't needed four-hour naps on the weekend. (See this , this , this , and this .)  I'm not exhausted come 7 p.m. on a Friday night. I have the energy at 44 that I should have had in my twenties. Are we low-carbers violating some law of physics or biology? No--the research and Mail article are magic tricks. The article is called "Why the Atkins Diet will make you sleepy but a packet of crisps will wake you up." Atkins is a specific diet: 20 grams of carbohydrate per day during induction with adequate protein and fat; most of Dr. Atkins' patients couldn't go over 40 grams of carbohydrate per day without gaining weight. And more importantly, would moving to Colorado help you lose weight? A recent study suggested that some people in the northern US may be lying about having a svelte figure by fudging on their height and weight in phone surveys. The abstract of the study didn't mention the West, but all the obesity maps I've seen show Colorado as having the lowest rate of obesity in the US. I don't know whether that's accurate, but I think we're better than average. A few months ago, my employer held a firm-wide video conference where we could see members of all or most of the other offices. We have two offices in Colorado; the rest are in downtown areas of medium and large cities in the South and the Midwest. We all work in the same industry; the employees are mostly white, college educated professionals. As far as I know, the only big difference between all of us is our locations. Crepes: Low Carb, Non Dairy, Gluten Free

I've never understood the appeal of pancakes: they're dry and tasteless. If you put syrup on them, they're sweet and soggy. Being mostly flour and sugar (if you put syrup on them), they really should be considered a dessert. Crepes are a different animal: they're light and fluffy and moist if you put some butter on them. They're not too eggy-tasting. If you make them with coconut flour and don't drench them in syrup, they shouldn't jack up your blood sugar. In other words, they're real food, not dessert. The recipe is from Cooking with Coconut Flour by Bruce Fife. It took 15 minutes to make these.

Braces, Coffee, Bedtime, and Cooking Like a Swede

Four More Weeks My orthodontist wants to wait four more weeks to take my braces off so that I can get a new crown. Meantime, my insurance is actually considering paying for some of this expensive dental work. Hot dog. Acid reflux, acne, and upset stomach down to flavored coffee I just tried to expand my food horizons and once again, ended up with problems. It took a few months to figure out it was flavored coffee. It's not the caffeine or the acid, since regular coffee and tea doesn't bother me, or anything I put in it (I take it black). It's not any natural flavors, since nuts, vanilla and cocoa don't bother me. It's the chemicals. Low Carb/Paleo in Downtown San Diego

As you'd expect, there's no lack of good restaurants in San Diego. I didn't go to as many as I wanted to: I was hungry only once or twice a day, even though I did a lot of walking. Since I was doing so much walking, I ate more carbs than I normally do. Grand Central Cafe at the YMCA Building, Broadway & India. So-so food; a little pricey for the lack of quality. I ate here a second time only because I didn't want to walk elsewhere in the coldest rain I'd ever been in. (I don't recommend their noisy hotel, either.) Burger Lounge. Best burger I've ever had, anywhere. Excellent salad, too. Waking Up in San Diego

I just got back from a trip to San Diego that wasn't at all what I thought it would be. It started with skin care products. These used to be my crack cocaine, especially when I was on a low-fat diet. I thought I was past that, but a dealer found me on the street and got me to drop what used to be a mortgage payment (before I refinanced). At least the stuff she sold me worked. Spending such an embarrassing amount of money on skin care was a wake-up call to be more stoic and less of a hedonist. The weather and hotel set the mood. It was so cold, cloudy and humid that I wore my long down coat and alpaca gloves. The hotel was the noisiest room I've had since I lived in a military dorm. Some of the guests let their doors slam shut with a BOOM!; my room was across the street from an all-night construction site; and very late one night, someone on the second floor pulled the fire alarm for no discernible reason, sending everyone out to shiver on the front steps for half an hour.

What Can I Eat on a Low Carb Diet? A Pictoral Guide

When someone considers going on a low carb diet, they tend to ask, "If I'm not eating bread, potatoes and cereal, what's left to eat?" It's shocking that starch and sugar makes up so much of a typical diet that people ask this. Naughty foods are bread and potatoes and Kool-Aid. These are nice foods: Left to right: bacon, baking cocoa, butter, oxtail, broth (note they've kindly provided a low-fat and low-sodium warning), chocolate (note the very high cacao, and therefore low-sugar, content), red wine (go easy on this), and diet soda (full disclosure: I'm a shareholder in the company that makes Hansen's). The Great Paleo/Low Carb Controversy

Whatever . Longer version: Out of necessity, I have a foot in both worlds. I pretty much know how I need to eat; I come online to seek out others who eat this way for fellowship. I don't like to argue. I was born old, and now I'm a 43-year-old dowager with no need to agree or convince or get along with everyone. If someone does well on starchy tubers and lean, dry, tough meat and daily workouts, that's great. (It worked for me for awhile, too.) If they think everybody should be on such a diet, time will take care of that. More likely, most young paleos will take a noncompliant spouse and the paleo diet will go out the window. A lot of them will be reconsidering low carb diets in ten years.

XXX Chocolate Ice Cream (Low Carb, Non-dairy)

With no added sugar and a complex flavor, and taking only a few minutes to make, this is better than any $10 gut bomb from a restaurant. Not for most kids or anyone else whose taste hasn't outgrown Rice Krispies treats. 1 egg 1 can (~2 cups) coconut milk 1/4 cup Splenda 3 T baking cocoa 1/2 t vanilla extract 1/2 t almond extract 1/2 t coffee extract In a medium bowl, beat the egg. In a separate small bowl, blend the baking cocoa with 1/4 c of coconut milk until smooth. (Stir the coconut milk well first if it's separated.) Add the coconut milk-baking cocoa mixture to the egg. Stir in the rest of the coconut milk, Splenda, and flavorings. Process in an ice cream maker according to manufacturer instructions. (In my electric Cuisinart ice cream maker, it takes 10 to 15 minutes.) Homemade ice cream gets very hard when frozen. For leftovers, remove from the freezer and let sit half an hour before serving. Fat fast info: 1/4 batch has 202 calories; 87% from fat.

Low Carb in Lincoln Park and Indy

I've recently been on vacation. Some wonderful things from my trip: I bought a pound of hot Italian sausage from Royer Farms , Indiana, purchased at the Broad Ripple Farmers Market in Indianapolis. Tasty, tender and pasture raised, but hot? Not even mild by Denver standards. I'm still slim and trim (though I've lost some muscle tone), still thinking critically, and my coworkers and creditors can still depend on me. Dentists, Where Are You?

The past few months have seen me spending a lot of time in dentists' offices. A few observations: most of the dentists and their employees are fairly svelte--at least, more so than the medical staff at a hospital or nursing home. The dentists also advise against eating sugars and starches, knowing what they do to teeth. Why aren't there more dentists in the low-carb internet community? Heaven knows we need all the allies we can get--and help won't come from most dieticians, nurses, "health organizations" (not when they take money from junk food and pharmaceutical companies), medical journals, government, or MDs (not even endocrinologists).
