Fry-Day: Pork Green Chili

I love Mexican food, but the tortillas, beans, rice and corn chips are too carby. Green chili (or chili verde) doesn't have to be, and if you simplify the steps in 500 Paleo Recipes, it doesn't have to be hard or time consuming to make. I started with 12 oz (by weight) of thawed medium chilies, two pounds of chopped pork, and a few other ingredients... ...and had green chili 90 minutes later.

Fry-Day: Paleo Chicken Almond Rice-A-Phony

It tastes just like the San Francisco treat! Shred and steam some cauliflower, fry with a few other ingredients, and you have a side dish much better than a game show consolation prize. (I cheated a bit and used store-bought chicken bullion.) It's almost all vegetables and nuts, but I can't quit eating it. How would Dr. Food Reward account for that? Oh yes--it tastes good. Fat Fast is Calming my Stomach

I don't know much about inflammation. What I do know is that immune cells can run amok, mistaking your own tissue for invaders, damaging it and inflaming it. It's also called autoimmune reaction and it can be systemic, throughout your body. And it's miserable. Food, especially wheat and dairy, is a major cause of inflammation for some people. We focus on carbs around here, but it's funny proteins that cause problems from paranoia to arthritis: gluten, gliadin, whey and casein, for instance. The proteins can also come from your own body: serious injury can cause a release of the DNA from your mitochondria, tiny organelles in your cells, but with their own DNA separate from yours.( 1 ) Interleukin-6 is an inflammatory protein your body makes ; homocysteine (another protein) may cause inflammation when there's too much of it. Dana Carpender: Food and Thought

I'd like to introduce you to someone I've added to my blog list: Dana Carpender at Hold the Toast. She's written several low-carb cookbooks and once struggled with a weight problem. In her book How I Gave up my Low-fat Diet and Lost 40 Pounds, Carpender describes eating a high-carb, low-fat diet: "hungry enough to eat the carpet" and unable lose weight doing cardio four or five times a week. As a kid, she stole money from her parents to support her sugar addiction. A low-carb diet got her out of reverse. The book begins with an introduction by one of her Internet friends who wanted to prove her (or any other woman) wrong. He goes on, sounding like a real piece of work, but tells a compelling story of how a low-carb diet saved his life. Then Carpender tells of her own experience with different diets and sneaks up on you with science backed up with a 17-page bibliography and her own experience and that of friends and family--and even a few complete strangers she c
